I'm confused but trying to learn. The real goal is to setup VLANs to allow me to separate IoT/Guest traffic from my normal LAN.

I have an older E4200 that I'm trying to use as a learning tool and a couple of AC5300s that are my main APs. All are running r45563 and have the WAN port bound to the LAN via the GUI... I've been watching some vids but my E4200 switch config screen doesn't match those I'm seeing online. Images are attached. My AC5300 default switch config does seem to align with some of the vids.

I'd like to understand why. Happy to be pointed to some other reading but I'm not sure I'm searching correctly as I seem to be going in circles and not learning much.

For vlan configuration see the stickies about vlans in the Advanced Networking forum.
You need the one with 1 CPU port.

Your problem is that you are running an outdated build.
Lots of things including vlans have changed.

Upgrade and after upgrade reset to defaults and rebuild from scratch, do not restore from a backup.
To do that is highly recommended as you are coming from a really old build.
For normal incremental upgrades it is not necessary.

Latest build is 55052

Fair... and I'm more than willing to jump ahead to a newer (newest???) build. That said, I was trying a 2024 build and the GUI was wonky on the old E4200.

is there a recommendation for a "new" build that is new enough to properly support VLANs and supports the E4200? Again, this is only a test machine but, once working, I'll standardize the build across all APs.

Just use the latest build 55052.

Make sure you use the K3X build for the E4200.

Clear browser cache and use Private/incognito mode if you have browser problems.
Most of the time it are the extension wreaking havoc.

I use FireFox and never had problems, I know some Chrome user reporting problems with some extensions

I have often had browser problems.
They always appear after major changes to the GUI.

Therefore the 1 rule is: after an update (especially after major updates over several revisions) press CTRL+F5 and clear the browser cache.

Or just use a portable or otherwise browser in private browsing mode with no add-ons. Some browsers you have to be careful with as they have noscript enabled by default in all modes.
