High capacity mesh network?

I'm organizing a small conference (~300 people) and have the go ahead to use my own wireless equipment from the ISP at the conference center.

Is it possible to mesh something like 10 routers and create enough capacity for my attendees? Does anyone have any tips on settings or hardware choices for doing this?
