I'll resurrect my old WL-500g Premium (purchased September 2007). Currently it has the "DD-WRT v3.0-r30631 mega (09/14/16)" firmware installed. Is this version OK? Which would be the latest usable version for this model?

Kernel patches since that release would dictate it'd be a good idea to upgrade. Also, K24 builds do not get enough flash reports for proper feedback.
