Hi, I have Netgear R6700 on DD-WRT v3.0-r31277 small (10/01/1Cool with ExpressVpn but I want to switch to NordVpn now.
Which DD-WRT fw will I need to flash onto the router to run NordVpn and do I flash that fw onto the router over the existing ExpressVpn fw?

The dd-wrt firmware is vendor neutral when it comes to the VPN provider. So use whatever VPN provider you like. Normally you can just use the existing GUI upgrade process to change firmwares. But if you want to be super cautious, then it would make sense to revert the ExpressVPN firmware back to stock, then follow the dd-wrt instructions for your router to move from stock to dd-wrt.

It is just as @eibgrad said.

You can upgrade via the GUI and use whatever VPN provider you want, nowadays it can be a good idea to choose a provider which also supports WireGuard, a new and much faster VPN.

Important: the R6700 has 3 versions which are different so make sure you flash for the right version.

As you are running a very old build it could be v1 you have?

As it is a very old build I would reset to defaults before the upgrade and after the upgrade.
Reset to defaults after the upgrade is the most important one.
Put settings in manually never restore from a backup to a different build.

See the forum guidelines with helpful pointers about how to research your router, where and what firmware to download, where and how to post and many other helpful tips:

Currently we are on build 48218.
