I use a Google Pixel (now with Android 12) and have never had a WLAN problem.
The pure WPA2 mode still works without problems.

You might want to delete the "saved Wi-Fi networks" and set them up again.

Anyway, it's not an Android 11 problem, at most a problem with your devices.

Hey Monza, you got me all excited there! But when I tried enabling WPA2 Personal and WPA3 Personal (SAE) simultaneously on 48141, things did not go well. My four-year-old ThinkPad (linux) kept popping up the same password window without connecting, and my iPhone XS simply popped up a "cannot connect" message.

Could be because this was on a VAP? No way around that for me though, as VAPs are central to the setup here.

Thanks for the encouragement though. Maybe we'll get there in a more complete way eventually!

I read somewhere that WPA2/WPA3 mixed mode is not much more secure than WPA2 - because attackers can still gain access via WPA2.

The mode is called WPA3 transition mode for a reason
