I am currently trying to setup guest networks on my R7800 with v3.0-r34900M installed.

I have managed to get both guest networks working for both 2.4GHz & 5 GHz but I have not be able to follow the guide in this link to the letter:

If I do as the guide states & set the DHCP for the interfaces upon connecting to the guest network there is no internet access.

If I set the DHCP to bridge 1 & bridge 2 everything works great.

Is this an issue in terms of security or am I missing something hence why it is not working as per the guide?

I have attached some screen grabs of my current settings with everything working.

sure it works as described in the wiki, had the firmware version at that time myself with VAP's and opendns used.

Edit: no I must correct myself, was build r37495M

Maybe just restart the router after it is completely and correctly configured.

Also, you do not use private IP addresses for the VAP's.
180.190 / 160.170 / 170.180 are public networks

I see only a complete misconfiguration, delete everything and start over again properly / also with a current version Very Happy

erase & start over
reread or search for DD-WRT guest net you can better understand ...most ALL of your current config is NOT right

Private IP addresses is

192.168.x.x
10.x.x.x
172.16-32.x.x

Put a private IP address on br1 and enable NAT.
