Is it correct to say that FAT partitions by design would never carry UUID? Hence, they could never be used to mount as jffs nor opt in Services->USB?
BTW, other than a cold boot, could I restart some processes to remount all USB partitions properly (including jffs and opt)?

The automount feature always attempts to mount /opt (and I believe /jffs as well) w/ any partition having that label. So you don't necessarily *have* to use the UUID. Not unless perhaps there's some ambiguity, such as multiple partitions w/ the same label.
