I'm no expert on filesystems, but wouldn't it be better to used some type of journaled FS, such as ext3 or reiserfs? JFFS just seems a bit clunky to me.

ext3 has the same problem. the filesystem is easy to break and jounaling would revert saved settings. but the jffs detect problem is already solved in last release
