but by default those come untagged so, yes those will appear once you tag them... yep..correct... Cool

The behavior is intentional.

Of course, the CPU ports are not tagged by default.
This is what EVERYONE wanted - because this corresponds to the r7800 factory setting.

And if a port (no matter what kind of port) is in more than one VLAN, the port must be tagged anyway.

Tagging a port (no matter what kind of port) also activates "enable_vlan"
Without a tagged port = no VLANs

and as already correctly recognized the VLAN interfaces are automatically created if a CPU port is tagged

In your examples where the LAN_CPU port is tagged and eth1 is unbridged, what is the significance of leaving NAT/masquerading enabled on eth1? Seems to be working for me (XR500, 52369) with NAT disabled. Am I breaking something subtle internally?

Why should I show unnecessary settings?
The interface is unbridged and not used anywhere - all additional configuration steps are unnecessary.

The examples in this thread are not updated by me either.
