Is there any other way to choose the latest best (or bug-free) build besides going through each build thread to vet them with how stable they are?

Your question sounds like "i want to buy the best car money can buy..." Cool
what type of car...
how much money...
new or old...
what colour...
what engine..

Best build on which router/model...?
All builds are in beta stage...constant development, upgrading, adding new futures, fixing bugs and ect.
Sadly, stock firmwares are not also stable or bug free, nor those get updates/fixes that often...

In general, latest builds are the most fixed...and yes sometimes those can be in heavy development..
but for general use are stable...unless you use/have a complex set up...and heavy depend on services that are WIP...
The best way to follow is:
-To read the SVN line https://svn.dd-wrt.com/ for changes
-Read the New Builds threads (depends on router SoC type, Atheros, Broadcom, Marvell and ect.)
-Check for new builds https://download1.dd-wrt.com/dd-wrtv2/downloads/betas/2023/
-If uncertain, wait, read the new build threads and ask a questions there...

When I mean "best", I mean stable. I go through some builds, and see users reporting issues, vs other build threads where it seems there are less, if any issues (ie more stable). Was just thinking it would be nice if there were maybe two release channels, like dev and stable. Why doesn't dd-wrt do something like that?

I have a NETGEAR R7800 (AC2600) and a Netgear N600 (WNDR3700v4).

It'd be nice if there was an option to check for updates via a channel (like stable), instead of having to go through each individual build thread here to see if any issues, and if there are issues, if any of them will affect me.

Also, I do understand no software/firmware is defect/bug-free.

To be able to designate a build as stable we have to test 200+ routers that is the problem.

And if everybody waits/uses a stable build who is going to test the less stable builds?

If we had a large staff with all the routers and could test etc. it would be possible but with a handful of volunteers it is difficult.

So checking the build thread is your best option.

I know some users of R7800 are periodically checking the R7800 install guide (link in my signature)

I second egc post from above...
To define stable build, people expose what they use their routers for, what services they run and ect...
In general, its very rare unstable builds to be realised...and those are removed quickly...
If you use a services that are on heavy development, you will see in SVN or on new builds threads
their progress/outcome...
My R7800 sees heavy use..and update it, when i see a vital security, kernel or services updates...
and that is what makes DDWRT unique, as it gets quick fix/patches/updates when those are available...
quicker that any other 3rd party firmware or even stock....Thanks to all the developers !

A stable build cannot be determined without testing all supported devices on a given build. It has become quite clear that the community is unwilling to support this effort by lack of reporting until, "it's broken, fix it" which usually does not start with all applicable amplifying information to help determine or fix the problem(s). If you have a device that is widely reported on, then the build threads are your only source of information... otherwise, caveat emptor.

Besides thinking on the particular router brand/model/version to recommend a build, there are also the functions/features you are going to use that particular equipment for. For instance, one build can have better stability for one particular feature than other, but maybe you're not using that feature, or maybe that's an important feature for you, etc.

So the original question is not easy to answer as there are too many variables involved, and that's why we haven't had an "universally stable" build announcement in a while.

For better guidance, I think it would be better to create a new thread on the proper forum related with the particular equipment of interest, and state the intended use and features, for better discussion.
