Is there a good current writeup on how I would configure a DD-WRT router (such as Netgear R7000) to function as a SoftEther server on recent builds of DD-WRT?
In particular, I will probably need it to use the SoftEther VPN Azure Relay Service to cut through the carrier grade NAT that the internet WAN of the router will have.
You can use a VPN provider which supports port forwarding via the VPN client.

to name a few
I had created openvpn server on DDWRT router (with DDNS) before having to deal with CGNAT. Are there any good working writeups on how to do similar with the options you name on DD-WRT, especially any of the last 3 not involving a commercial VPN. Search results I find are very sparse and sketchy, or not close to target.

If your commercial VPN Provider supports port forwarding then it is very simple.
On the VPN provider you can acquire a port for you to use.
The DDNS client on the router (set to check external IP) will come up with the IP address of the VPN provider. That IP address together with the port you acquired is what is visible for the outside world and if you connect via that IP-address:port then traffic will be routed to your router.
